This Fair Trade Organically grow coffee presents notes of chocolate and toffee and makes an excellent espresso. The Majority of the farms who belong to CEPCO (La Coordinadora Estatal de Productores de Café de Oaxaca) come from indigenous communities throughout Oaxaca. The coffee within this decaf was selected based on cupping evaluations. After selection, the green coffee is pre-soaked in water to expand the beans for caffeine extraction. The beans are then introduced to a solution concentrated with coffee solubles that extract the caffeine without extracting the coffees particular flavor.
