THE ORIGIN STORY

We're extremely excited to be able to introduce you to our latest offering from Costa Rica. This fruit-forward, red honey processed coffee is extremely complex, with notes of strawberry jam and candied lemon! 

Las Lajas Micromill has become somewhat of a legend within the specialty coffee industry of Central America, partly due to the tasty coffees they produce, and partly due to the fascinating story of its heritage and how it came to be what it is today. 

Francisca and Oscar Chacon of Las Lajas Micromill are third generation coffee producers whom inherited the mill from their grandparents. They are widely known for being the first to produce natural and honey processed lots in Costa Rica, and for competing in the Cup of Excellence Auction in 2009. 

In 2008, an earthquake struck Costa Rica and wiped out all electricity and water to the area during the harvest. This rendered their de-pulper useless and prevented them from washing the mucilage from their coffee, as per their usual processing techniques. Being the innovators that they are, Dona Francisca and Don Oscar used their knowledge of African coffees and promptly built raised beds, drying the coffee naturally in the fruit. The results were astounding, and Las Lajas has continued to build upon this ever since. 

Nowadays, Las Lajas focuses primarily on natural and honey lots with vastly different characteristics, determined by the drying curves and environments they're subject to. This particular method, "Red Honey", involves removing the cherry but leaving the mucilage on the seed as it dries. It is then turned twice a day in a greenhouse and allowed to ferment for up to 10 days. 

Their heritage, dedication to the environment (including conservation of water through their various processing styles) and commitment to quality are what stood out to our team when making this selection. We truly believe you'll be as blown away as we are by this remarkably complex cup.
