THE ORIGIN STORY
José Roberto Deras is the owner of Finca Los Robles located in the Altopec-Metapán region of El Salvador. He started this farm in 2009 after receiving a donation of Pacas and Pacamara seeds from the Cayahuanca project. Since then, he has been maintaining the following process for his coffee: After harvesting only ripe cherries, the coffee is de-pulped and fermented for an average of 11-17 hours. After this process, the coffee is then fully washed and placed on raised beds to dry for an average of 10-16 days depending on the weather. This Pacamara microlot brings large seeds, sweetness and structure.
